Mao’s braised pork in brown sauce

Mao’s braised pork in brown sauce, a traditional delicacy in Hunan Province, is different from that in other places and listed in the ten classic Hunan dishes. It is made of pork belly stewed in tinted seasoning including sugar and cooking wine. The dish features a golden hue and a rich flavor.


This dish was named after Chairman Mao Zedong who was enrolled at Hunan Normal University in 1914. Every Saturday, Mao and his schoolmates would treat themselves with pork belly braised with rock candy, star-anise, cinnamon and laurus no bilis. Mao developed quite an affection for it. In order to pay tribute to Chairman Mao Zedong, people named this dish after him.
