Xiangli bacon is a traditional dish in Xiangtan, Hunan Province. The main ingredient is grown Ningxiang pigs with thin skin and thick meat. It takes six processes to make Xiangli bacon including cutting pork into strips, making seasoning, pickling them, washing off salt, drying them in the air, and smoking them.
Xiangli bacon is red and yellow in color and its fat resembles wax. It features the exact-right extent of savoury and smoked flavor, and it’s not greasy.
