Yongzhou orange sugar

First, we should decoct the mixture of rice sprout, rice milk and sugar in the iron pot to make the rice sprout sugar. And then the concentric orange slices which have been peeled and deseeded need to be soaked in lime water for a day to remove the astringent taste and drained off. Finally, both orange slices and the rice sprout sugar should be decocted in the pot until the orange slices turn reddish brown and bright without water in the pot and the pattern of orange skin appears. Now it tastes fragrant and sweet.

The recipe of Yongzhou orange sugar has been listed in the fourth batch of intangible cultural heritage of Yongzhou, and was honored as “Yongzhou’s Top Ten Characteristic Snacks” in the first Yongzhou Tourism Culture Food Festival in 2017.
